My husband thought I had bought the chicken from a restaurant. He loved it! The only thing I didn't add was the sauce. My husband is a very picky eater and the thyme on the sauce recipe wasn't gonna do it for him. I do believe that the Kosher Salt had a lot to do with the cooking process and the taste. I wouldn't risk using sea salt. Anyways, we used the left over chicken for enchiladas the next day, which were excellent! Thank you Chef John for this chicken recipe.. I will be making it again!
The best/easiest roast chicken recipe ever. The meat was so juicy and flavorful. I will make sure to get as much excess salt from the pan bottom before I cook next time because the sauce was really good, but too salty for my family. Also, I didn't have any fresh thyme so I used dried. It was still good, but next time I hope to have fresh on hand.
I was anxious to try this dish and decided to count on Chef John for his expertise to cook, so I cooked this amazing recipe for my son's last home cooked meal before he leaves for college in the morning. It was a success!! What an amazing recipe and I ALWAYS add my own twist t a recipe but I actually stuck to this one--did increase the amount of sauce though because we love sauce and I am glad I did because it's simplicity was superb! Served it with roasted asparagus, mashed cauliflower and sliced homegrown tomatoes!! This will be a favorite in my recipe box for sure!
