Pretty Chicken Marinade Recipe
This is a great chicken marinade! Allow chicken to marinate for no longer than 4 hours, because the lemon juice will begin to cook the chicken. When grilled, the chicken turns a beautiful caramel color, which makes great presentation. This is my fiance's favorite chicken.
Excellent taste, pretty color just lik the recipe name. I used less olive oil, soy sauce, and lemon juice and still had plenty of marinade.
Restaurant quality! Absolutely LOVED this marinade. Beautiful balance between sour, warmth, and sweet. Hints: Canola oil works as well as olive oil, but with a little less flavor; and, 1 T paprika is a perfect substitute for the liquid smoke.
I found your recipe worked marvelous. I did make a couple of changes to make due with what was on hand. Light soy sauce bottle was empty and only had 1/2 cup of non reduced soy sauce so I added water to make up the 2/3 of a cup. I used Horseradish Dijon mustered as well because it was on hand. Other than that I went with it as you layed it out. I did find with that much oil in the marinade that I needed all the height I could muster on the grill. For me I wouldn't be surprised it that your recipe ends up being the hit of the summer for us.
This was so delicious! I'm not a chicken fan, but my husband loves chicken so I'm always on the lookout for something we can both enjoy. This recipe is definitely a hit! I put one large frozen boneless chicken breast in a tupperware container with the marinade and let it defrost - longer than the prescribed time because I had to push back my dinner plans one day. I don't know if the lemon juice began to cook the chicken or not, and I BBQ'ed it on the grill the regular way. It was so moist and juicy! We both loved it. (It's also a bonus that the ingredients to the marinade are things that I keep in the house anyway, so I can whip it up at the last minute if need be.)
It was good flavorful recipe particularly if you like soy sauce as that is by far the dominate flavor. If you marinate in a plastic baggies you can make half the amount suggested for the amount of chicken specified. Next time I will bump up the other ingredients a bit.
With all the good reviews, I figured I couldn't go wrong trying this recipe. I followed the recipe exactly as written, used low sodium soy sauce and only marinated for four hours. This just didn't have much flavor, seemed to be missing something. My husband and I didn't care for this at all. Sorry to say, I will not be making this one again.
This had a nice intense flavor, but in spite of using low-sodium soy sauce, I still found it quite salty. Must be something in the liquid smoke? Thanks for sharing your recipe and review comments, TaraNicole!
